Spicy Vegan Sausage Soup


1 package of meatless vegan sausage (Field Roast or Beyond Sausage) I used spicy Mexican chipotle

1 container of portobello mushrooms

2 cans of stewed tomatoes

1 medium sweet onion

1 cup of cut okra

2 cups of water

1 teaspoon of onion powder

1 teaspoon of garlic powder

*I use organic, when possible.*


Boil 2 cups of water in a pot with 2 cans of stewed tomatoes, then add the garlic & onion powder

Then add mushrooms and okra to the pot & reduce heat to medium

Use a tablespoon of olive oil in a separate pan, heat medium

Add diced onion to the pan with the sliced pieces of the vegan sausage, cook it for 5 minutes

Place the onion and sausage into the pot with all of the other soup ingredients. Reduce to low heat and simmer for 15 more minutes.


Serving size: 4
