Baked Vegan Doughnuts

I made these doughnuts in honor of National Donut Day. Being that I have never made doughnuts from scratch before, I wasn’t sure what to expect. It was more of a waiting process than I expected. In addition, this recipe from marystestkitchen.com turned out more bread like than I prefer. I still thoroughly enjoyed the frosting and the easy process of making it.

Check out her link for the full baking details. Here is the complete list of ingredients for the doughnuts and frosting:

For donuts

1/2 cup warm water (110°F)

1 teaspoon of yeast (half an envelope)

1 tablespoon golden flax meal

3 tablespoons coconut oil

2 tablespoons sugar

1/8 teaspoon vanilla extract

1 3/4 cups all-purpose flour

2 teaspoons vital wheat gluten (pure gluten flour)

1/2 teaspoon baking powder

For Chocolate Glaze (enough for 1 full batch)

3 tablespoon soy milk (or plant milk of choice)

3 tablespoons cocoa powder

1 tablespoon melted coconut oil

1 teaspoon vanilla extract

1 1/2 cup icing sugar

*Serving size: 1/2 dozen of full sized doughnuts & 6 additional donut holes
