Ingredients:
1/4 cup chia seeds
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 cup of coconut milk
1 medium banana
1/2 teaspoon cinnamon
Mix all ingredients in a bowl, except the bananas and cinnamon. Cover and refrigerate bowl for at least 5 hours or overnight.
After refrigeration:
Put half of the mixed ingredients in a mason style jar, then put some of the banana slices midpoint. Add the rest of the mixture. Put the remainder of the banana slices on top. Sprinkle cinnamon on top. Ready to serve!
