Chili 🌶

 

Ingredients:

3 large celery sticks

3 large carrots

1 red pepper

8-10 small organic red potatoes

2 cans of navy beans

1 can of kidney beans

1 large can of fire roasted diced tomatoes

1 large can of diced tomatoes

2 cups of frozen corn

2 cups of cut okra

1 pack of Baby Bella mushrooms

2 cloves of garlic

1 medium yellow onion

1/2 teaspoon of black pepper

1/2 teaspoon sea salt

1 teaspoon olive oil

1 teaspoon paprika

1 teaspoon turmeric

2 tablespoons garlic powder

2 tablespoons onion powder

2 tablespoons chili powder

 

Heat large pot, add olive oil with onions & garlic to lightly brown for a few minutes

Add 8 cups of water and bring to a boil

Put all spices into the pot

Add cut & peeled uncooked potatoes to the pot with 1 large can of fire roasted tomatoes & cover the pot with a lid

Cook for 20 minutes and start cutting all the vegetables

After stirring and checking the potatoes, add the celery, carrots and red pepper

Drain and rinse beans

Then add beans, diced tomatoes and mushrooms to the pot

Cover & cook for 10 additional minutes

Mix the frozen corn and okra into the pot during the final minutes.

Make sure to remove the pot from the burner when you turn it off.
