Portobello Mushroom Fajitas Oil Free!


1 package of portobello mushrooms

1 green pepper

1 red pepper

1/2 white onion

2 cloves of garlic

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon pepper

1 teaspoon turmeric

1/2 tablespoon sea salt

1 package of tortillas


Clean all vegetables and cut into traditional fajita slices

Slice mushrooms into thicker slices, approximately 1 inch in thickness

In a large bowl, add 1 cup of water along with all spices & stir

Medium heat a large pan with 1 cup of water, add garlic cloves and half of the sliced onions

Put all the remaining vegetables into the large bowl with the water/seasoning mixture

After several minutes, add the large bowl mixture of vegetables to the large pan

Drop the heat to low, stir and cover for 10-15 minutes

Frequently monitor heat and vegetables to your desired tenderness then remove from heat

Heat tortillas in microwave for 30 seconds, covered by a damp paper towel

Serve hot!

*You can also serve tortillas at room temperature, if you prefer not to heat
