Curry Dish with Peas, Spinach, Okra & Tofu (oil-free) 🌱

Ingredients:

1 cup of peas

2 cups of spinach

2 cups of okra

⬆️ I prefer frozen veggies for this recipe

1 package of firm tofu

2 cloves of garlic

1/2 cup of diced red onion

2 cups of brown rice

1 tablespoon: Ginger powder, garlic powder, onion powder & curry powder

1 teaspoon: Turmeric, salt and pepper

1/2 teaspoon: All spice

 

Bring 4 cups of water to a boil, put the pre-washed cups of brown rice in the pot.

Stir, heat to low and cover (usually takes approximately 20 minutes) but continue to check and stir until rice is soft

Remove tofu from package and drain water from it

Cut it into small squares

Put 2 cups of water in a large pan, heat pan to medium – high

Put diced garlic cloves and onions along with all spices into the pan of water

Stir and set the heat to low, once it’s brought to a boil

Add peas, spinach and okra into the pan

Then add the tofu squares

Stir all ingredients in with the sauce then cover pan, keep medium heat for 5 minutes

After 5 minutes, check and stir again

Drop heat to low simmer for 10 more minutes

Serve hot over brown rice

Add red pepper flakes for additional spice 🔥

Serving size: 4-6
