Jackfruit BBQ Sandwich

Ingredients:

2 (8oz) cans of young organic jackfruit

1 cup of BBQ sauce of your taste preference

2 cups of raw green cabbage

1 cup of raw red cabbage

1/2 cup carrots

4 tablespoons of vegan mayonnaise

1/4 cup of sweet mandarin oranges

1 tablespoon of fresh chopped dill

Black pepper to taste

Ciabatta bread (loaf of pre-cut slices for 4 – 5 servings)

 

Drain cans of jackfruit and place in a large mixing bowl

Mix in BBQ sauce with jackfruit

Place jackfruit in a large saucepan, heat on low while checking frequently for 15-20 minutes

Then turn heat off and set pan aside

Clean and shred cabbage and carrots

Mix cabbage in a bowl with mayo, sliced pieces  of oranges, dill and black pepper (to taste)

Cut Ciabatta bread into sandwich slices, if not pre-cut

Add BBQ jackfruit to Ciabatta bread then top it with coleslaw mixture

Add desired sides, ready to serve!

Serving size: 4-5
