Vegetable Soup with Fresh Celery Purée Broth Base 🌱

Ingredients:

5 large celery stalks

1 package of baby bella mushrooms

1 medium bushel of broccoli

1 medium head of cauliflower

3 cups of spinach

4-5 large carrots

5-7 large Yukon potatoes

1 yellow onion

2 garlic cloves

1 can black beans (drained/cooked 16oz)

1 can navy beans (drained/cooked 16oz)

1 tablespoon sea salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 tablespoon turmeric

1/4 teaspoon rosemary (dried)

 

Boil 8 cups of water in a large pot

Wash all fresh vegetables thoroughly

Add cut potatoes with spices into boiling water

Purée celery <— use food processor

Add purée celery, diced garlic and onion to the boiling water with potatoes for 20 minutes uncovered on high

Add beans and all other diced vegetables to the pot and reduce heat to medium for an additional 10 minutes

Continue to stir and check periodically

30 minutes total cook time, ready to eat!

Serving size: 6 – 8
