Zucchini Noodles with Cashew Dressing



4 uncooked zucchini

1-2 cups of raw cashews

1/2 lemon

1/8 teaspoon sea salt

2 cups of water

*Cilantro & black pepper optional


Use a spiralizer to make noodle shapes from

raw clean zucchini, set noodles aside

Soak cashew in a cup of water (1/2 hour preferred)

Add soaked cashews plus additional cup of water to blender with lemon juice and salt

Blend until smooth like salad dressing

Add black pepper or cilantro to taste, see variation on pictures above


Serving size: 4
