Fresh Vegetable Soup

Ingredients:

8 medium Yukon potatoes

1 -2 cups of diced okra

1 large can stewed tomatoes (28 oz.)

1 yellow onion

2 garlic cloves

1 cup of frozen corn

4 medium whole carrots

5 celery sticks

3-4 portobello mushrooms

1 teaspoon of salt, turmeric & cumin

1 handful of fresh chopped cilantro

*black pepper and paprika to taste

 

Put 8 cups of water in a large pot, set temperature on high to bring to a boil

Add peeled and cut potatoes to the pot with all spices, and plan to cook it for 20-30 minutes until potatoes are soft

Do not cover

Add chopped onion, garlic, carrot and celery to the pot of potatoes, check time

At ten minutes left to boil, add diced okra, cilantro, stewed tomatoes, diced mushrooms and corn to the pot

Stir and continue to check the vegetables. After 10 minutes, soup should be ready.

*Continue to cook if softer vegetables are preferred.

Serving Size: 4-6
