Chickpea Salad Wrap


1 can of chickpeas (drained & washed)

2 medium carrots diced

2 celery stalks diced

1 cup of shredded romaine

1 cup diced red onion

2 tablespoons of vegan mayo

1 package of tortilla wraps

Mix all the vegetables in a large bowl, except the lettuce. Add vegan mayo, as desired. I use a hand masher to smash up the chickpeas until smooth. Make sure the chickpeas are rinsed & drained before you place them in the bowl. Place a couple of spoonfuls from the bowl onto a tortilla. Add lettuce, then wrap it.

Ready to eat!
