Creamy cashew tomato basil dressing

Can we talk about how simple it is to make nutritious salad dressing? Check out my recipe below and feel free to let me know what you think! Is there anything to add to this one?


1 cup of raw cashews

1 cup of cherry tomatoes

1/2 teaspoon sea salt

1/2 teaspoon dried oregano

1 bunch of fresh basil 🌿

1 garlic clove

1/4 medium red onion

2 tablespoons apple cider vinegar

Soak cashews in one cup of water for at least a 1/2 hour prior to starting the salad dressing

Properly wash basil, tomatoes, onion & garlic.

Add all ingredients to a high speed blender and blend on medium to high for approximately 1 minute. I use a Vitamix blender which makes it really easy for me to make my dressings. You may need to test out your blender to see what settings and timer work best for you. Once blended to taste, it should be ready to serve. You can also store it in the refrigerator an hour ahead, so it’s cold when serving.

I like to make extra and store it in an air tight container in the refrigerator and use it within 3-4 days.
