Vegan Mac N Cheese Oil free Nut Free


2 potatoes

1 carrot

1 medium onion

1 garlic clove

1/2 cup almond milk

1 box pasta (16 oz)

1 Tbs Nutritional yeast

1 Tsp Turmeric

Pink salt & Pepper (to taste)


Peel, cut & boil in water the potatoes, carrots, onion and garlic (about 20 mins or until soft).

Drain water, and put all the cooked veggies into a high speed blender.

Add all other ingredients directly into the blender. Blend for 2 minutes on high or until smooth. I emphasize using a high grade blender! I used a Vitamix blender.

Cook pasta separately, as directed.

Once sauce is blended, pour it directly onto the cooked pasta and mix them together.

Serves 4
