Pan seared tofu with veggies and brown rice.


1 package of firm tofu (drained)

2 cups chopped spinach

1-2 peeled raw carrots (sliced thinly with grater)

1 diced small to medium yellow onion

3/4 cup Tamari

2 tablespoons of sesame oil or 1/2 cup of water for oil substitute

1 teaspoon of black sesame seeds

Salt and pepper to taste

Cooking instructions:

Place oil in pan, heat pan. Start on high drop to medium quickly then add onions. You can also do the same with water as an oil replacement.

Add your drained and diced tofu into the pan on medium heat. Add tamari, stir it in with the tofu making sure each one is coated with it. Tofu cooks quickly, just brown all sides. Total time should be no longer that 10-15 minutes.

Place tofu on a bed of cooked organic brown rice. Cook rice per box instructions. Then add the shredded carrot and spinach. Top with black sesame seeds. Salt & pepper to taste.
